Meatless Day 7 (and Tempeh Tacos)

I’m really enjoying my foray into meatlessness and using it as an excuse to try lots of new foods and recipes.

Tempeh is something I’ve always wanted to try but haven’t a clue what to do with. I actually bought some last year and let it sit in my fridge for months before holding up the white flag and tossing it.

I’ve decided to jump back on the proverbial tempeh horse and actually cook some this time. I’ve found this blog in particular to be a great reference on meatless ingredients that I may not be totally familiar with.

Tonight I made tempeh tacos with radish slaw (recipe here). Both the spiced maple tempeh and the radish slaw were phenomenal. And perfect together. I enjoyed both components enough that I’ll surely make them both separately again as components of countless meals.

The only real substitution I made was cayenne instead of chipotle powder, because that’s what I had and I like spicy.

Simplicity…

…is delicious.

Today’s breakfast was one that my grandmother made for me time and again during my childhood. Potatoes and eggs with a handful of frozen peas thrown in. Three simple ingredients that are always around the house become just the perfect meal.

Grandmas are geniuses. Or is it genii? In any event, she’s a really smart lady. Make this and you’ll agree.

How? Chop leftover potato, brown in Pam or olive oil, add peas. Cook till thawed/hot. Add two beaten eggs, act like you’re making scrambled eggs. Do a little dance, dump it on a plate, salt, pepper, hot sauce. Buon appetito!

Achieving Balance….

…amongst my pillows.

While I know that my last bedding setup had far too many pillows (I’m talking like 15 throw pillows, minimum), I feel like the current setup just doesn’t have enough.

I’m telling you about this because I’m fairly certain that at least 80% of my female readers can relate to my dilemma. There is a happy medium of pillows out there, but what is it? How many pillows is just too many? And more importantly, why does it matter so much?

Meatless Day Two (and the world’s best tuna salad)

No seriously, it WAS the world’s best tuna salad.

Here’s what was in it: a can of Italian tuna in olive oil, one stalk of chopped celery, a handful of quartered grape tomatoes, capers, a few quartered oil cured olives, two little peppers from the Whole Foods olive bar, chopped up, red pepper flakes, red wine vinegar.

How I made it: plop all in bowl, mix up. Eat. (Did you seriously think I was going to give full on instructions here? Psht. You’re not fools, you know how to make tuna salad.)

Meatless Lent is turning out kind of fun. I enjoy a culinary challenge and I expect to find lots of sometimes fun (and sometimes disastrous, I’m sure) ways to eat things like canned tuna.
